Breakfast of champions

I realized something today…I need to learn to say no! I have this very bad problem of taking on waaaay to many commitments and then crashing and burning and needing to quit a ton of things!

I’m slowly working on this problem, but it’s a long process. Case in point, I promised myself that I would not work more than 8 hours on any Thursday that I would take a night off. Well that idea ended right in the garbage can! I finally rolled home at 8pm and rummaged around in the Kitchen for dinner.

On a side note, is anyone else out there a big fan of the frozen chicken fillets from M&M meat shops? It’s just another item in my ever growing list of products I love from there. I am forever addicted to their French onion soup, but alas, I try to limit myself to only shopping there once in awhile, as it can get kinda pricey! But the chicken fillets were on sale so score!

Anyway, back to the topic of the post…BREAKFAST!!!! A few years ago I rediscovered my love of breakfast, I somehow in my crazy teenage ways had thought for years that I didn’t need a real breakfast. When I lived in residence I ate it everyday but during the first few years of living in an apartment I somehow stopped eating this great meal. Well over the years my tastes for breakfast have changed. I don’t really crave fried foods anymore, although the breakfast sandwich the other day is a prime example of my love of greasy foods!

Well earlier this week I made use of a tub of yogurt, I had leftover in the fridge at work that served as my dinner one night after we had a mild oven incident that led to my supervisor and I cleaning up lots of melted plastic and me prying this lovely shelf out:031 So this tub of yogurt was just begging to be eaten, and I obliged one day for breakfast, I topped it with a pumpkin spice muffin and I was instantly in foodie heaven!

blog 007 Seriously, I love the contrast of the muffin crumbles to the thick strawberry yougrt, excuse the fact that my drool is now on the keyboard! But seriously muffin in yogurt, TRY IT NOW!!!

Well, tomorrow is Friday and I have another crazy day of work, followed by a weekend full of turkey! I’ll be posting later in the weekend :)

This is why…

you should never skip a meal, or in my case 2 in one day! You end up being so hungry at 10pm that you completely devour a plate of food while your boyfriend laughingly snaps this very unflattering photo!

In my defence, I hadn’t really planned to skip meals. It was Sunday and I woke up at 7:30pm and prepared to go running. I ate a bowl of fruit loops with not milk (we were out of it and I didn’t want toast). Then I was off to the running room at 8:30am! I ran and then went to the lab and made it home around 10:30am. I then went back to bed!

I usually try not to nap but I was pretty tired. When I rolled out of bed at 12:30 I had a quick snack of a piece of bread and peanut butter and was off. I didn’t really eat my first meal until about 5:30pm, when I ate that delightful steak I showed you yesterday. I suspect the lack off food was what caused my body to revolt with a headache. Though I must say that tea sure hit the spot, and actually reduced the pain. Now I’m not sure if it really did anything or if I just hoped it would, so it had a placebo affect. But either way I wasn’t in pain so it didn’t matter!

So after eating dinner things started to derail. It was like my hunger was in a deep sleep but once it had food it was ready to pounce! I started craving everything in sight and couldn’t stop eating. When I made this delightful, though not in the least bit healthy, snack of potatoes hotdogs and onions, I quickly devoured the whole plate! Luckily my hunger did finally go away, but I won’t be making that mistake again!blog 001

Monday  was a much better day. I awoke headache free and fairly well rested. Then my lovely boyfriend in an effort to redeem himself for the photo, bought me this delightful breakfast sandwich from tims!  Doesn’t it look delicious! I opted for the sandwich over my usual yogurt for breakfast because I knew it would be a long time until I ate lunch/dinner and I wanted the extra bulk of the sandwich. Though lets face it, it was totally delicious :)blog 003

I ate my usual soup for lunch, and then snack on a cereal bar later in the afternoon since I had to go running at 6:30pm and can’t eat much before I run. When I came home from the run my tummy was rumbling, but I had a coffee date with a friend planned so I munched on a cookie, and when I FINALLY rolled into the house around 9:30pm this delicious plate was there to greet me!blog 006That would be 2 slices of garlic bread with some smart pasta and spaghetti sauce that we took out of the freezer. Did I mention I love carbs :)

Well I’m off to bed, I have a early and long day planned tomorrow, BUT then it’s Friday!

Busy Beaver

Ok, so over the last few weeks I’ve been wavering back and forth between what to do about this blog. I’m been in a bit of a funk and I wasn’t sure what to do.  When I started this blog I wanted it to be a happy place, so I didn’t feel right about posting all my gripes on here.

However I realized something today, and that is that if I always post happy things you’ll never see the real me and there will be large chunks of my life that will simply be missing. So I’m back for good! I’m sorry for the long absence and over the coming weeks I’ll slowly fill you in.

First off, I for about the last 2 weeks have fallen off the healthy eating wagon. Well not entirely but I' had been working such long days that I was eating fast food at least once a day. I also was eating on the run, and although I’m not proud to admit this, I was also skipping meals. However I’m happy to report that I finally figured out a way to stop the fast food even with this hectic schedule! I have rediscovered cooking on the weekend, and the slow cooker. So for the next little while a lot of the meals that you will see on here will be centered on quick easy nutritious meals.

My goal is also to post about once every 1 to 2 days. I really love blogging, but right now I’m attempting to finish up my degree and life keeps throwing me tons of curve balls!

Since today is Sunday, I had a bit more time, and Matt and I decided to take advantage for the still decent weather and broke out the BBQ for some steak, corn and grilled green peppers. It’s a simple meal, but it sure was delicious!035

Unfortunately after dinner things started to go a little haywire. I’ve had a lot of stiffness in my body lately, and tonight I ended up developing a pretty nasty headache. It was so bad at one point that every time I took a step my head would pound. When I got home I discovered we had no Advil, which meant it was the prefect time to try out some home remedies for headaches. I’ve always used the massage technique for headaches but I was interested to look up other techniques that could potentially help relieve the pain.

So I did a quick google search, while drinking a bottle of water, and found that lemon juice and mint leaves in hot water might help. So I made myself this lovely cup of the juice of 1/2 a lemon (plus a slice) and a handful of mint leaves, mixed with hot water.036 So far it seems to be helping, I can walk again, and I can actually concentrate on the computer screen! Plus I love munching on the wilted mint leaves. However I still think that this headache might be a result of lack of sleep so I plan on getting to bed a little early tonight!

Well it’s nice to be back! I’ll leave you with the following question… when you have a headache what do you do to get rid of it?

One crazy couple of weeks!

What happens when you take 1 grad student, mix it up with a ton of deadlines, a couple new part-time jobs and helping with orientation? You get one tired grad student! The last few weeks have been pretty crazy! I have a ton of pictures and recipes to share, but I wanted to let all of you know that I am alive :)

I'll be back either tonight or tomorrow with a nice long post :)

A new twist on potlucks

So one of the great things that I love about doing my masters degree is all the amazing and diverse people that work in my building. There are people from all over and with a wide variety of interests. Every so often a bunch of us will get together and have a potluck, but this time my friend Jon, who usually organizes it, sent an email saying he wanted to mix it up:

“I've been feeling culinarily adventurous lately and so am extending an invitation to any and all who are interested to come over for supper tomorrow night.Don't actually cook anything! The idea is to bring something we can make supper out of…”

I was totally all over that! So a bunch of us got together and brought components, I precooked some potatoes and brought some cheese and headed over. Jon and I went for a run first, which by the way was my first run back since being sick! I’m slowly getting back into it, and it went ok.

So I ended up preping the individual scalloped potatoes that I made a while back. Other people brought dips and supplies for chicken tortillas, oh and Jon made homemade tortillas that totally rocked my world! It was great, and it was great company as well. Here is most of what I ate plus another 1/2 tortilla and a handfull of chips.IMG00325 Well I’m off to bed now, it’s been a very stressful week, and it doesn’t look like it’s going to ease up. Does anyone else ever feel like your trying to climb a mountain and there is no end in sight?
